Dark Red Kidney is known as the chili bean and is very popular in Mexican cooking. The beans are very sweet and meaty. They grow on sturdy bushes with 5 seeds per pod.
Caution: Kidney beans cannot be eaten fresh, they must be dried on the plant and boiled before consuming. Fresh or dried Red Kidney Beans are quite toxic, but are detoxed by boiling - however, they should never be cooked in a slow cooker, especially at low setting. They are sufficiently detoxed in 10 minutes, but longer is recommended.
